Lovely!! We make a Romanian naturally fermented elderflower cordial every year- mine aren’t open yet but I’m looking forward to it!

We make it the same way you make your cordial above however once made we put the mixture in a large glass jar covered with a cheese cloth instead of the lid in a sunny window for 3 days to a week stirring every day until the mixture ferments enough to make it “fizzy”. Then it’s ready to consume!

Oh that’s funny because I haven’t bothered to put mine in a bottle yet and it’s just sitting on a sunny table with a cloth over the top and it’s been three days.. accidental win!

You never cease to amaze me or cease to titillate my taste buds. What a clever creature you are. Celia would have been so proud as am I, but probably would not have praised you directly, being the offspring of Victorian parents. I wish to be treated to some of these delights you have described so eloquently.
