Lovely!! We make a Romanian naturally fermented elderflower cordial every year- mine aren’t open yet but I’m looking forward to it!

We make it the same way you make your cordial above however once made we put the mixture in a large glass jar covered with a cheese cloth instead of the lid in a sunny window for 3 days to a week stirring every day until the mixture ferments enough to make it “fizzy”. Then it’s ready to consume!

Celia would have been so proud as am I, but probably would not have praised you directly, being the offspring of Victorian parents.
